"i wanted to translate the tailor's workroom. it's such a masculine, traditional world, yet there were these raw elements - the metallic odour of the sewing machines, the smell of the wools as it is steamed and pressed - incredible dusty but sweet smells, so i had to approach it both ways, fusing tradition with modernity. To do this, I used a lot of ingredients I hadn't used before" - bertrand duchaufour
